Spices were some of the most valued commodities of the ancient world. Many wars were fought over the spice trade. Spices add a lot of flavor to any sweet or savory dishes. They can make any ordinary dish into something exciting and extraordinary.

Cardamom Coffee

To make traditional Middle Eastern coffee, add 5 cardamom pods to 6-8 tablespoons of fresh ground coffee in a french coffee press. Add 2 cups of hot water, stir, and let set for 3 minutes to allow the flavors to combine. Add cream and natural sweetener to taste.

Mediterranean Warm Spicy Lentil Salad

Add 1 teaspoon each of cumin, coriander, and black peppercorns, and grind together. Add 1/4 teaspoon of ground cardamom powder to the finished powder mixture. Mince 2 small cloves of fresh garlic and add the whole mixture to 3 cups of cooked warm lentils. Toss beans and ground spices with 5 tablespoons of extra virgin olive oil. Just before serving, add 1/4 cup of finely chopped cilantro and salt to taste. Serve warm.
